Soprano olive oil from Sicily

Marisa Greco first started producing Soprano extra virgin olive oil in the village of Dattilo near Trapani in north west Sicily to ensure a very high quality oil that would be free from artificial production methods and additives.
The olives are hand picked from the trees and not allowed to come into contact with the ground, they are then sent t the oil mill for processing with twelve hours for the pressing process which is in two phases strictly using cold press method.
The olive oil has an exceptional taste thanks to both the location of the land and olive groves, the farming techniques employed and also the olive varieties that are used in the production of her oil. Marisa uses two varieties of Sicilian olives, the Nocellara del Belice and the Cerasuola di Paceco. The nocellara is unusual in that it has two DOP protections and protected status in the EU.

Marisa Greco ha iniziato a produrre l'olio extra vergine d'oliva Soprano nel paesino di Dattilo vicino Trapani nel nord est della Sicilia al fine di garantire un olio di altissima qualità e privo di additivi e metodi artificiali di produzione.
Le olive sono raccolte a mano con particolare cura nell'evitare il contatto con il terreno, e vengono inviate al frantoio entro dodici ore dalla raccolta per la procedura di estrazione che è a freddo in due fasi.
L'olio risulta eccezionale al palato grazie ad una combinazione di fattori che vanno dalla posizione delle terre al tipo di piante, alle tecniche di agricoltura e anche alla scelta di un blend particolare. Marisa usa infatti le due varietà, la Nocellara del Belice e Cerasuola di Paceco per il suo blen di olio novello. La nocellara in particolare gode dello stato di DOP.




The oil is yellow with hints of green and it has a distinct flavour and aroma, being full bodied with a peppery finish and a very low percentage of acidity. It is the perfect olive oil to use with grilled meats, bruschette and beans soup, also with strong game and mixed salads.
On a tasting session with our panel in the UK the oil was very well received with nearly full marks for quality and taste, It will be used in our olive oil workshops both in London and the east of England in 2017. It is also currently planned to arrange both tours and workshops during visits to the Soprano olive mill near Trapani as part of our ongoing educational projects with clients and guests from the UK and the USA.

L'olio presenta un colore giallo con striature verdi e un distintivo aroma subito riconoscibile, corposo e con un persistente sapore piccante a una bassa percentuale di acidità. Ideale con carne grigliata, bruschette e zuppe di legumi, cacciagione e insalate.
Durante una sessione di degustazione qui in UK l'olio è stato molto ben recensito con voti quasi massimi per qualità e sapore. Verrà usato in degustazioni e corsi che terremo nel 2017 sia a Londra che nell'est dell'Inghilterra. Stiamo anche pianificando visite e degustazioni in loco durante le nostre visite educative al frantoio Soprano come parte del nostro programma per il prossimo anno per i nostri clienti UK e USA.
